These sugar free meringues taste just like normal sugar laden homemade ones. Light and crispy on the outside with a sticky, marshmallowy centre. Not like those powerdery white domes that you get in the supermarket. But the best part is they are made using Vitafibre instead of sugar. Vitafibre is a fibre based sugar substitute and is available here. Which means they are totally sugar free!

40g Egg whites (I use Two Chicks Liquid Egg Whites)
60g Powdered Vitafiber
Squeeze of 1 slice of lemon
Small pinch of salt
1Pre heat your oven to 145’c
2Using a large, clean bowl add the egg whites, salt and lemon juice to the bowl.
3Using an electric whisk, whisk the egg whites on slow for 1 minute.
4Turn the whisk up to high and whisk until the eggs form peaks (this will take around 2-3 minutes).
5Turn the whisk down to medium and add the Vitafiber slowly 10g at a time.
6Keep whisking until the mixture forms stiff peaks and is really glossy.
7Spoon out onto non stick parchment paper.
8Bake for 1 hour until golden brown.
9After 1 hour, turn the oven off and leave them to cool in the oven with the door slightly open.
10Allow to cool fully before topping how ever you like! Here I have simply used fat free Greek yoghurt and berries.
11Note – your eggs will not rise if there is ANY yolk is in the mixture, also make sure your bowl is really clean and free from any grease.
