I adore salmon in any form. Cold smoked, hot smoked, pan fried, steamed… you get the point. But my absolute favourite way to eat it is baked and topped with chia seed dressing.
One of the reasons for this is obviously the incredible flavour, but also that it’s ready in less than 30 mins. That includes the preparation and cooking of both the salmon and dressing.
It can be hard to get the timing right with salmon fillets, if you under cook it then it can be slimy, and over cooked its nasty and dry. Hopefully following these simple steps you will have perfectly cooked salmon covered with a delicious and healthy dressing.

Ingredients
2 Fresh salmon fillets
For the dressing
2 Teaspoons of chia seeds per salmon fillet
1 Teaspoon honey or sweetener of your choice
Juice of 1 slice of lemon
2 Tablespoons balsamic vinegar
Directions
1Pre heat your oven to 220’c
2Place your salmon fillets on a lined baking tray.
3Whilst your oven is heating up you can prepare your dressing. All you need to do is add all of the dressing ingredients to a small bowl and place to one side.
4Once your oven reaches 220’c pop your salmon fillets in and bake for 12 mins(approx 200g fillet) – 15 min (approx 250g fillet) – you will need to adjust the time slightly depending on the size of your fillet.
5Remove the salmon from the oven, transfer them to your plate and spoon over the dressing. I like to serve mine on a huge salad with lettuce, beetroot, tomatoes, avocado and feta cheese.
