Some call it French Toast, I’ve always known it as eggy bread. What ever you like to call, it it’s unlikely to play a part in your healthy diet. Until now! My healthy protein packed version is low in fat, high in protein but is just as tasty – I promise!

Yields: 1 Serving
2 x slices of Dr Zaks Protein Bread (you can use any bread but this is my fav!)
50ml liquid egg whites – I use these ones (or you can use 3 egg whites or 2 whole eggs, tailor this to your macros)
Bacon medallions – these are much lower in fat
Sugar free pancake syrup
1 heaped teaspoon of coconut oil
1Pour the egg whites onto a large plate and lay on your bread, leave it for a minute to soak up the egg before turning over to get an even coating on each side.
2Put your bacon on to grill now.
3Heat a large frying pan on a moderate heat and add the coconut oil.
4Once the coconut oil has melted place in your eggy bread.
5Fry for 3-4 minutes on each side.
6Layer slices of grilled bacon between your eggy bread and serve drizzled with sugar free pancake syrup and a pinch of cinnamon.
