I’m a HUGE fan of Mexican Food. Burritos, Fajitas, Enchiladas you name it, I’ve devoured it. However, Mexican food despite being utterly delicious, isn’t renowned for being the healthiest of cuisines. One of arguably the the most tasty, but most unhealthy of the lot is chilli cheese nachos. With an average portion containing more than 1,000 calories and over 100g of fat, its usually something saved until a cheat meal. Until now! With a few clever swops and the help of Blend Brothers Mexican Savoury Blend I have created the same mouthwatering flavour, but for nearly half the calories, a smidgen of the fat content and MORE protein!
Here’s what you will need, and how to make them…

Yields: 1-2 servings
Ingredients
150g extra lean beef mince
1/2 avocado chopped into chunks
1 handful of sliced red onions
1 tablespoon fat free Greek yoghurt
55g Blend Brothers Mexican Savoury Blend
100ml boiling water
30g grated fat free cheese
1 wrap of your choice
Directions
1Begin by preheating your oven to 180′ degrees.
2Slice the wrap into triangles and lay them on a baking sheet.
3Once the oven has heated up, place the wraps into the oven. Bake for 5 minutes, turn them over and bake for a further 5 minutes.
4The wraps will slightly colour and will become crisp. Allow them to cool whilst you make the chilli topping.
5In a dry frying pan, fry the beef mince for 5 – 7 minutes until it all turns brown then remove it from the heat.
6Prepare the Blend Brothers Mexican Savoury Blend by adding 100ml of boiling water, then add this to the mince and stir.
7You can now compile your nachos! Begin by laying the nachos out on a large plate.
8Then top with the chilli, sliced red onions, avocado, grated fat free cheese and yoghurt.
9These are my favourite toppings but it would also be fantastic with extra jalapenos for a spicy kick.
10This recipe makes enough for 1 person as a main meal, or for two people as a starter or a snack.
