Whoop! Doughnuts are back on the menu my friends. These little beauties contain no wheat flour, no added sugar or fat and provide a decent whack of protein in each one. They are also really easy to make. I suggest getting yourself a silicone doughnut mould (like this one) but if you don’t have one you can use a regular cup cake tin. Not quite as fun but still as tasty 🙂

Yields: 7 Doughnuts
Ingredients
120g Oat flour
120g Quark or Greek yoghurt
1 Large or 2 small ripe bananas
1 Whole egg
1 Heaped tsp baking powder
30g Muscle Mousse chocolate
10g No added sugar cocoa
100ml Milk
Toppings
Feel free to top however you like! I used…
Dark chocolate (this one to be precise)
Decorations (I used white chocolate stars and flaked almonds)
Nuts N More high protein chocolate peanut butter
Directions
1Pre-heat your oven to 170’c
2In a bowl mix together the oat flour, baking powder, Muscle Mousse and cocoa.
3In a separate bowl mash up the banana as much as you can so there are no lumps. If your banana isn’t ripe enough to mash pop it in the microwave for a minute and this will soften it up.
4To the mashed banana add the milk, egg and quark/Greek yoghurt and mix well.
5Grease your doughnut mould (or cupcake tin if you don’t have one) with oil, butter or cooking spray.
6Tip the wet ingredients into the dry and give it a good mix.
7Spoon the mixture into the mould or cupcake tin and bake for 20-25 minutes.
8Remove from the oven and allow to cool before adding your toppings!
