Butterscotch & Cashew Butter Protein Cookies

These butterscotch and cashew butter protein cookies are made with only 3 ingredients and are a perfect healthy on the go breakfast or snack which are super quick to knock up. I really like the combination of the cashew butter with the butterscotch flavoured protein powder. But try experimenting with your favourite nut butter and protein powder like peanut butter and chocolate whey.

150g Bulk Powders protein porridge butterscotch (if you do not have this use 50/50 porridge oats to whey protein powder)

70g cashew nut butter

115g extra light cream cheese


1Preheat oven to 180’c

2Using your hands rub the cashew butter into the protein porridge. It will begin to resemble crumble and look as if it’s disappeared completely, but don’t panic.

3Add the cream cheese and mash together using a folk. This will form a very thick mixture which you can then use your hands to roll.

4Take a small walnut sized chunk of mixture and roll it between your hands into a ball. Then place it onto a lined and greased baking sheet ensuring you leave a gap between each one to allow for it to spread later.

5Once you have all your balls (…grow up) on your baking sheet, take a fork dipped in a little coconut oil to prevent it sticking to the mixture (failing that warm water) and squash each one until you have a cookie approximately ½ inch thick.

6Bake for 10 – 12mins or until lightly golden brown.

7Allow to cool before trying not to eat the entire batch in one go.
