Smoky BBQ Chicken Tenders

Crispy chicken tenders are usually something that have to be saved for a treat, but with my recipe you can tuck in any time you like! I've used UFIT's new BBQ flavoured high protein crisps as the coating, then dunked them into Blend Bro's incredibly authentic but entirely sugar free BBQ sauce - because everyone knows you can't have a chicken tender without drowning it in sauce, which is usually the most unhealthy part! This recipe is so incredibly simple even those who don't think they can cook (or kids!) can do!

Low Carb Fish Fingers

Fish fingers were a favourite of mine as a child, who am I kidding they are a favourite of mine as an adult. I ALWAYS had them with loads of ketchup (is there any other way of eating fish fingers?!) but standard ketchup is loaded with sugar, which is why I now use Blend Bros Sugar Free Ketchup which tastes just the same without any of the sugar! Whether you are on a low carb plan or not, these fish fingers are delicious and each portion contain over 30g of protein!

Low Carb Smokey BBQ Pulled Pork

Sweet, sticky BBQ pulled pork is usually something that is saved for cheat day, but not anymore! You can make your own healthier version using my recipe which uses Blend Bros Sugar Free BBQ sauce. I like to serve mine in little gem lettuce leaves with lots of topping options like smashed avocado, spicy salsa, Greek yoghurt and spring onion. Cheats Sugar Free Sticky BBQ Chicken Wings

This recipe is SO simple, the most technical part - the sauce has been taken care of by using Blend Bros awesome sugar free BBQ sauce. It's so authentic tasting, not like so many other sugar free sauces that just taste like chemicals! A normal portion of BBQ chicken wings would contain at least 15g of sugar, mine contains less than 5g in the entire portion!

Easy Thai Turkey Burgers

Everyone loves a burger, but it’s usually something we save for a treat and not normally something you’d expect to indulge in mid-week on a healthy diet. Until now! These burgers are made with leaner turkey thigh mince which has enough fat to keep them moist and juicy, but less than beef mince. It’s flavoured with Blend Brothers Thai Jungle Curry Savoury Blend which adds all the traditional Thai flavours without having to buy lots of ingredients. High Protein Seasoned Steak Salad

Now you might be thinking how difficult is it to cook some steak and whack it on a salad. Well, this is no ordinary salad! The trick is in how you prepare the steak to make it as succulent and juicy as possible. It can then be enjoyed hot or cold, so if you need to pre prepare your meals and take them with out to work this recipe is a must! I’m not a fan of cold steak at all. In fact I’d go as far to say as I really don’t like it. BUT preparing the steak like this its succulent, juicy and full of flavour whether you then enjoy it hot or cold.

Mini Tomato, Chorizo & Spinach Egg White Frittatas

These mini frittatas are packed full of flavour and high in protein as well as being low in carbs. Although they sound quite complicated to make, I promise you they couldn’t be easier. I really enjoy them hot with a salad as a simple lunch but my partner also loves to take them in a Tupperware to work and assures me they are just as good cold as they are hot. If you are veggie you can always leave out the chorizo/bacon and perhaps add a little low fat cheese for flavour? Either way, once you give these a try they will become a staple in your weekly menu!

Unless you’ve been living under a rock you’ve probably heard of cauliflower ‘rice’. There are now countless recipes with various different takes on this low carb classic, but you won’t find anything like this one! I topped it with some super lean and healthy pan fried squid. Home made truffles sounds quite technical right? Well actually it’s one of the most simple things to make! If you are new to baking with protein or baking at all, then I really recommend starting with this one. Rich and chocolatey, but ridiculously low in fat and calories, these truffles contain quality whey protein and have a subtle coffee kick thanks to the real Coloumbian coffee in TWIST’s delicious espresso protein drink. This makes them the perfect mid morning or mid afternoon pick me up, whilst also helping you hit your protein quota!

Low Carb Coconut Flour Crusted Chicken

This recipe was created on one of my low carb days when I was having a craving for chicken nuggets. I do have a healthy chicken nugget recipe (you can find it here) but this uses oats, so I needed to find a lower carb alternative. That’s when I remembered Sukrin’s fantastic Coconut Flour. It does have a subtle coconut flavour, but this isn’t overwhelming so I thought I would give it a try, and I’m glad I did as it was so delicious!

It’s quick and easy to make, as with all my recipes – so give it a try!

Low Carb, Gluten Free Flaxseed Crackers

Protein Peanut Butter Cups

So it’s confession time, this recipe doesn’t contain peanut butter. SAY WHAT?! I know, stay with me… Instead it uses peanut flour, which gives all the deliciousness and protein of peanut butter, but without so much fat – bonus! My peanut butter cups also use whey protein to boost the protein content further, with a touch of Sukrin’s amazing sugar free icing to add a little sweetness without sugar.

I prefer to use a silicone chocolate mould to make these as it’s easy to get them out of, but you can use a classic chocolate mould, or even small paper cake cases if you don’t have one.

Mexican Pibil Pulled Chicken

I know what you’re thinking, what the hell is Mexican Pibil? Traditionally it is a Mexican slow roasted pork dish which is cooked with orange juice and chilli (amongst other things). This results in a warming gently spiced sauce – sounds good right! Traditionally the pork is slow cooked over a fire pit, which isn’t the most convenient of cooking methods but it produces the most incredible flavour. So how did I do it? Well actually I didn’t. The clever folks at Blend Brothers have created a range of delicious high protein sauces, one of which is Mexican Pibil. Full of all the same delicious flavours as the traditional recipe, but minus the suckling pig and fire pit. It’s also infused with protein, so you can cut back on expensive meat and still hit your protein quota! I swopped the pork for chicken in this dish to bring the fat content down, but by using a whole chicken and roasting it on the bone, all the juicy pull-ability is kept. I chose to serve mine in a wholemeal wrap with salad, but it’s also great with some steamed rice or even cold the following day over a crisp salad.

Smoked Chicken, Chick Pea & Avocado Salad With Zesty Lemon Dressing

This is a quick, simple and clean tasting salad that you can knock up in a matter of minutes. I highly recommend the smoked chicken breast from Muscle Food. You can use plain cooked chicken but the smokey flavour really gives this salad a lift.
