Healthy Thai Spiced Baked Chicken

I know I say this about every recipe, but this has to be one of the most simple yet most delicious recipes to date. No matter what your level of cooking skills, you’ll be able to create this tasty Thai Spiced Baked Chicken. It’s all thanks to some juicy chicken thighs (which I get from Muscle Food) and Blend Brothers Thai Jungle Curry Savoury Blend (which you can get here).

1Pre heat your oven to 200’c
3Place this in a small baking dish and drizzle over the water.
4Put the chicken in the oven to cook for 20 – 25 minutes.
5That’s is! That’s honestly it. I know, this cooking lark is pretty easy isn’t it! Now you can serve this chicken with SO many different things. Wither with some traditional Thai sticky rice or just a salad, it’s absolutely delicious.
6My favourite way to serve it is chopped up in a crispy tortilla cone topped with hummus. To do this all you need to do is cut small circles of any wrap of your choice and curl them into a muffin tin. Bake this for around 6 – 7 minutes at 180’c until they crisp up and form a ‘cone’ shape that you can then stuff. You could try out my recipe for Fat Free hummus or just add some Greek yoghurt and dig in!
