Enchiladas are a Mexican restaurant favourite, and one of my favourites! But the standard recipe calls for full fat beef mince, high sugar tomato sauces and oodles of melted cheese. Whilst it sounds delicious, its not something you should be indulging in too often. My recipe keeps all the flavours, but with a few clever tweaks halves the fat and calories so it can be enjoyed mid-week! I tried this recipe out on my partner who instead of taking a few bites to ‘try’ it, finished the entire thing and insisted we had it the next day too – I wasn’t complaining as the entire thing takes no more than 30 minutes to make from start to finish.

Yields: 1-2 servings
1 Large wrap of your choice (if its a smaller wrap you might need to half the filling quantities)
150g Turkey thigh mince or diced turkey thigh
1/2 Bell pepper finely chopped
1/2 Red onion finely chopped
1 Large tomato finely chopped
55g Blend Brothers Mexican Savoury Blend
30g Mature grated cheddar cheese – feel free to use full or half fat cheese. I used fat free cheese.
1Pre heat your oven to 180’c
2Heat a large frying pan to a medium heat and add a splash of oil.
3Once the oil has heated up, add the onions, chopped onion, bell pepper and turkey.
4Cook until the vegetables soften and the turkey has browned.
5Then add the tomatoes and half of the Blend Brothers Mexican Pibil High Protein Sauce mix.
6Cook for a further few minutes until the turkey is cooked through.
7Make up the other half of the Blend Brothers Mexican Pibil High Protein Sauce mix with a splash of water to make a thick sauce.
8Place the wrap on a lined baking sheet and spoon the mixture on top.
9Close the wrap, pour over the sauce and sprinkle on the cheese.
10Place this in the oven for 7-10 minutes and it’s ready!
