This is a quick, simple and clean tasting salad that you can knock up in a matter of minutes. I highly recommend the smoked chicken breast from Muscle Food. You can use plain cooked chicken but the smokey flavour really gives this salad a lift.

Yields: 1-2 Servings
Ingredients
1 Smoked chicken breast
1 Small ripe avocado
1/2 Can cooked chick peas
1/2 Bell pepper
2 Tomatoes
1 Handful fresh coriander
Dressing
Olive oil
Juice of 1/2 lemon
Freshly ground black pepper
Pinch of salt
1 teaspoon honey or sweetener
Directions
1All you need to do is drain the chick peas and give them a rinse before adding them to a large bowl.
2Then chop the cooked smoked chicken, avocado, bell pepper, tomatoes and coriander then add to the chick peas.
3In a mug stir together all the dressing ingredients, pour over the salad and give it a good mix.
4Make sure you add the dressing immediately as the lemon juice will stop the avocado from turning brown.
