Skinny Chimp Ambassador Kirstie here with a scrummy little treat for you all to get your chimpy mouths round!

I am currently prepping for my first ever show at the end of October, so this little snack has helped me a lot with cravings and is great with fitting in with my macros earlier on in my prep! I recently made this little beauty for a Macmillian Cancer coffee morning I had at work. It was great to share some healthy tips with the rest of the office and show them that healthy food can be tasty and can be a treat! They were all pleasantly surprised at how “Normal” it tasted! Ingredients

2 ripe bananas

90g of oat flour (GF if needed)

90g cup vanilla whey protein powder

200g of 0% fat Plain Greek yogurt

3 egg whites

85g of unsweetened applesauce ( I used Waldens Farm pancake sauce)

4 teaspoons Stevia (to taste)

2 teaspoons of pure vanilla extract

1 teaspoon of baking soda

Pinch of salt

Directions

1Preheat oven to 375 degrees F / 190 degrees C / Gas Mark 5

2Place bananas in a mixing bowl and mash until you have a thick pudding-like consistency. (I used a potato masher to get it really smooth!)

3Add all remaining ingredients to bowl and mix well.

4Prepare an 8×8 baking pan with cooking spray or coconut oil, or use 2 small loaf pans (this is what I used).

5Evenly place batter in pan and bake for 20 to 25 minutes or until you pull a clean knife out when testing.

6I then layered with banana pieces on top and sprinkled with a bit of lemon juice to stop the banana pieces going brown. You could also before placing the banana on top cover with a thin layer of Nutella for a little extra naughtiness.
