Millionaire shortbread (or chocolate caramel squares as they are otherwise known) are one of my favourite treats. This recipe uses healthier ingredients without any refined sugar with the added benefit of protein from one of my favourite vanilla flavoured powders by Natural Nutrients which I picked up from OrganicAthleteLifestyle.com

Yields: 8 slices
100g Almond flour
50g Natural Nutrients Grass Fed Whey Protein Madagascan Vanilla
50g Oat flour
50g Coconut oil
200g Pitted medjool dates
100g Plain chocolate (sugar free if desired)
1In a large bowl mix together the almond flour, oat flour & Natural Nutrients Grass Fed Whey Protein Madagascan Vanilla.
2Melt the coconut oil and pour over the dry mixture.
3Mix together until all of the dry mixture is covered with the coconut oil.
4Take the mixture in your hand and squeeze it together. If it crumbles apart add a splash of milk or water until it stays together when you squeeze it.
5Tip into a greased & lined baking tray & use your fingers to press it out flat.
6Bake for 10 mins @ 170'c.
7Peel the skin off the dates and place in a microwave proof bowl. Add a splash of boiling water & mash until completely smooth.
8Remove the biscuit base from the oven and allow to cool before topping with the mashed dates.
9Melt the chocolate and pour this over the dates.
10Cool in the fridge for at least an hour to firm up.
11Slice & try not to eat the entire lot in one go!
