Sweet, sticky BBQ pulled pork is usually something that is saved for cheat day, but not anymore! You can make your own healthier version using my recipe which uses Blend Bros Sugar Free BBQ sauce. I like to serve mine in little gem lettuce leaves with lots of topping options like smashed avocado, spicy salsa, Greek yoghurt and spring onion. It's also great in a wrap or served with some Mexican rice. Give it a try & let me know what you think.

Ingredients
1 1/2 kgShoulder of pork
1 tspPaprika
1 tspBlack pepper
1 tspSalt
1 Good quality stock cube
5 tbspBlend Bros Sugar Free Smokey BBQ Sauce
Directions
1Rub the paprika, salt & pepper into the shoulder of pork
2Place the pork shoulder into a large casserole dish
3Make up the stock in a separate bowl and pour this over the pork
4Cover the casserole dish with a lid and pop it in the oven at 150'c
5Allow to cook for 3 - 6 hours checking every hour to make sure it does not cook dry
6If the meat is still tough and the liquid has run out simply add a touch more water
7Once the meat is really soft remove it from the oven and leave to cool for 15 mins
8Remove the shoulder of pork from the casserole dish, take off the fat and shred the meat using a fork
9Add the Blend Bros Sugar Free Smokey BBQ Sauce to the meat and stir through
