I know what you’re thinking, sweet eggs – really?! I urge you to try this recipe before you knock it. Especially if you are on a low carb diet and are craving something sweet. It’s super quick and easy to make and I promise you it will hit the spot.

Cook: 25 mins
1 Whole egg
100g Egg whites
15g Sukrin Coconut Flour
15g Sukrin Sugar Free Icing (plus extra for dusting)
40g Fresh blueberries
1tsp Coconut oil
1All you need to do is throw all of the ingredients into a blender & blend until smooth.
2Then heat a frying pan on a medium heat with the coconut oil, then pour in the mixture.
3Cook for 3 – 5 minutes until the top begins to bubble. You can either then flip the tortilla over (carefully!) or pop it under the grill to cook the top.
4To serve simply fill with more fresh blueberries and an extra dusting of Sukrin’s Sugar Free Icing.
