This recipe for high protein Quest bar apple crumble with vanilla protein custard was inspired by Quest Nutrition’s ’15 second recipes’ – if you haven’t seen these check them out. Not quite 15 seconds but pretty close, this recipe is really quick and simple but with big tasty rewards and over 35g protein per serving! The protein custard is nothing short of a genius invention (if I do say so myself). Made all the more delicious with my all time favourite vanilla flavour whey protein powder from Smart Protein.

Yields: 1 Serving
1 apple pie Quest bar (I get mine here)
1 pinch of your favourite seeds! I used sunflower, pumpkin and flax (optional)
1 dessert spoon no added sugar custard powder
20g vanilla protein powder (whey or casein) I used this one from Smart Protein
1 apple peeled and chopped
Splash of water
For the crumble
1Preheat your oven to 180’c
2Crumble the Quest bar into small pieces and place on a lined baking tray along with your chosen seeds.
3Bake for 3-5 minutes. You want the chunks to turn golden brown but not burn! Remove from the oven and allow to cool and crisp up.
4Place the apple in a microwave safe dish with a little water. Microwave for approx 5 minutes until soft (the amount of time will differ depending on the size of the apple chunks and the power of your microwave)
For the custard
1Add a splash of boiling water to the custard powder to make a paste. Add the protein powder and stir. If you are using whey you may not need any more water, if you use casein you may have to add a little more hot water until you reach your desired custard consistency.
2Compile your crumble how you wish! I like to take a tall sundae glass, add the cooked apple followed by the crumble topping then drown it all in the custard. If you like to keep your crumble topping really crispy you could add your custard after the fruit then top with crumble. Enjoy immediately.
