High Protein, Low Carb Triple Chocolate & Peanut Butter Fudge

Who doesn’t love fudge?! Rich, sweet and melt in the mouth. The ultimate indulgence which is usually rammed with refined sugar, cream and butter. And that’s before any flavourings or additional goodies are added!
But not one to miss out, I thought I would try and recreate this tasty treat but in a healthier, protein packed way. This recipe contains just 3 simple ingredients and the flavours can be changed to your taste.

1In a small microwave safe bowl measure out 20g of coconut oil and the white choc PB.
2In a separate microwave safe bowl measure out 20g of coconut oil and the choc PB.
3Microwave these for 30 seconds until the coconut oil has melted and the PB is soft.
4Add the vanilla protein powder to the white choc mixture and the chocolate protein powder to the chocolate mixture.
5Stir them both into a paste and pop them in the fridge to chill for 15 minutes.
6Take one of the bowls and tip the mixture out onto some non stick baking paper. Using a knife spread it out until its around 3cm thick.
7Add the second bowl of mixture on top and spread this out.
8Put the whole thing in the fridge to chill for at least 30 minutes.
9Melt the chocolate in the microwave or over a pan of hot water and drizzle over the chilled fudge.
10Pop this back in the fridge until the chocolate hardens.
11Chop into chunks and enjoy!
