As many of you reading this will know, I LOVE peanut butter. In fact, I love all kinds of nut butter. So when I saw that Sukrin made peanut flour I knew I had to make a batch of peanut butter cookies. Usually I would add oats but I chose to make a lower carb variety for those who are looking for a sweet treat on a low carb or low sugar diet.
I tried these cookies out on lots of friends and family and many of them had absolutely no idea they were sugar free. In fact if they didn’t know me better they would think they were the real deal!
So I won’t waffle on any longer, this is how you make them.

Cook: 15 mins
(Recipe makes approx 10 small cookies)
60g Peanut butter (I used this one from The Wild Peanut)
30g Sukrin Peanut Flour
30g Vanilla whey protein powder (I used this one from Smart Protein)
1 Whole egg
1/2 tsp Baking soda
1Pre heat your oven to 175’c
2In a bowl mix together the peanut flour with the peanut butter. If your peanut butter is dry you might find it easier to rub the mixture between your fingers.
3Then stir in the protein powder, Sukrin:1 and baking soda.
4Add the egg to this and stir into a thick cookie dough.
5Roll the mixture into 10 even sizes balls and place them with plenty of room between each onto a lined baking sheet.
6Using a fork press each one down to form a thick cookie.
7Bake for 12 minutes until the cookies just begin to turn golden brown.
