Healthy Thai Peanut Prawn Stir Fry

I don’t know about you, but after all the rich festive food and drink my body has been desperately craving some good nutrition and lots of veggies. But as always, it’s still got to taste good! Thanks to Blend Bro’s Savoury Blends, creating a healthy, high protein meal is easier than ever. Here I’ve used the delicious Thai Jungle Curry Savoury Blend (which you can get here) to create a really light but flavour packed dish that you can whip up in just a few minutes.
- Prep: 10 mins
- Cook: 10 mins
- Yields: 2 servings
1Chop all of the ingredients (other than the prawns!) into equal sized chunks and fry them in a hot pan with a teaspoon of oil. My favourite oil to cook with is coconut or avocado oil as it doesn’t burn, even at a high temperature.
2Once the vegetables have begun to colour, add the prawns and cook for 2-3 minutes until they turn pink.
4It’s now ready to serve with whatever you like! My favourite is with some fine rice noodles, or for a super low carb option you can serve it with my famous ‘broccoli rice‘ as I’ve done in the image shown.
