Healthy Slow Cooked Beef Curry

This is the perfect lazy recipe. All you need to do is a little chopping, throw everything in your slow cooker (or saucepan) and leave it alone. There is no need to stir it, sing to it or tend to it in anyway until it’s cooked.

  • Cook: 4 hrs
  • Yields: 2-3 Servings

Ingredients

500g Braising steak chopped into chunks

1 large sweet potato chopped into chunks

1 green pepper

1 can of chopped tomatoes

1 onion (I prefer these red ones)

1 clove of garlic

1 tablespoon curry paste (not sauce!)

1 teaspoon gara masala

1/2 teaspoon cinnamon

1/2 teaspoon cumin

1 teaspoon chilli (optional)

Directions

If you have a slow cooker

1All you need to do is chuck everything in raw, give it a stir and cook with the lid on on a high setting for 4 hours or low for 6 hours.

If you do not have a slow cooker

1You can use a large saucepan on the hob. You will need to add an extra 200mls of water. Simply stir everything together, bring to the boil then turn the heat right down to a simmer and cook for 4 hours.

2Give everything a stir before serving, the sweet potato will break up and thicken the sauce.

3Its perfect served with some boiled basmati rice (I use this one) or why not try making my Quinoa Chapatis. If you are watching your carb levels you might like to serve this curry with my famous Cauliflower Rice.
