Healthy Apple & Blackberry Crumble with Protein Custard

This healthy apple & blackberry crumble recipe is super simple to make but dripping with protein custard is absolutely to die for. Sometimes cold evenings (or even warm ones to be honest!) call for something comforting. This recipe provides all the taste without the excessive amounts of fat and sugar found in classic recipes, and of course with the addition of a hefty protein hit!

1Peel and chop the apple and cook along with the blackberries in a splash of water on the hob until both are completely soft.
2For the topping simply crumble up the flapjack or oat based energy bar and bake at 180’c for 5-7mins until golden brown.
3For the custard mix up 1 tablespoon of custard powder with 150ml of boiling water. Stir until smooth then add your chosen protein powder. Add more hot water until you reach your desired custard consistency – if you are using casein you will need more than a soy or whey based protein powder.
4To compile spoon your fruit into a bowl or glass then tip over your crumble and saturate with protein custard and enjoy!
The original and some would argue the best protein bars with the best nutritional profile. I always have a box of quest bars in my cupboard.
