You might not be familiar with what flavour ‘Snickerdoodle’ is, so let me enlighten you. Snickerdoodle is a name which has made it’s way over from the U.S – basically it’s a plain cookie which is then rolled in cinnamon sugar. I have taken the same idea with these Gluten Free, Sugar Free Raw Snickerdoodle Bites, and included all the same flavours but without the sugar, butter, oil or refined flours.

They are ideal to make as an on the go breakfast or snack, and because they don’t require any cooking they couldn’t be more quick and easy to whip up!

Ingredients

30g Gluten free oats

20g Vanilla whey protein powder (I used this one from Smart Protein)

20g Peanut flour (I used this one from Sukrin)

1/2tsp Cinnamon

Splash of milk or water to bind

15g Sukrin Gold

Directions

1Mix the oats, protein powder, 1/2 the cinnamon and peanut flour in a bowl.

2Add the milk or water little by little to form a thick batter – it needs to be stodgy enough to get your hands in without it falling apart.

3Set this aside and spread the Sukrin gold and 2nd 1/2 half of the cinnamon onto a plate.

4Roll the oat mixture into small bite sized balls and put them on to the sugar.

5Roll it around until it gets a layer of cinnamon sugar all over it.

6Place on a plate or tray lined with baking paper, once you’ve completed this with all the mixture pop them in the fridge.

7Chill for at least 30 minutes before tucking in!
