This is a fantastic alternative to your typical ‘leafy’ salad. Crunchy raw veggies combined with sweet pomegranate, its perfect to serve with some grilled meat or fish.

Ingredients
1/2 white cabbage
2 fennel bulbs
1 pomegranate
1 bunch of coriander
2 carrots
Ingredients for vinaigrette
6 dessert spoons balsamic vinegar
1 teaspoon Dijon mustard
juice of 1/2 lemon
salt
pepper
optional extra
1 finely chopped chilli
Directions
1Finely chop the cabbage, fennel and coriander and place in a large bowl. Then grate in the carrot.
2Remove the pomegranate fruit from peel and sprinkle into the salad.
3To make the vinaigrette all you need to do is simply whisk everything together, then pour it onto your slaw and stir.
4If you want to me this in advance leave your dressing on the side and add it before serving.
