I have always wanted to try out a baked oats recipe and when I acquired a freezer full of home picked blackberries I knew now was the time to try one out! The obvious pairing with blackberries was apples, which also feature in the recipe. Baked oats make a great substitute for protein porridge if time allows, or are equally tasty eaten cold as a healthy on the go breakfast or snack.

40g Jumbo oats
1 Whole egg or 2 egg whites
100ml Milk (I used almond)
30g Whey protein in a fruity flavour or vanilla
1 Apple peeled and cooked (or use tinned)
100g Fresh blackberries
1Preheat the oven to 180’c
2Using sunflower or coconut oil grease a small, shallow oven safe dish.
3Place the apple and half of the blackberries at the bottom of the dish like this
4Whisk together the egg, milk and protein powder until smooth. Then add the oats and stir.
5Pour the mixture over the fruit and top with the remaining blackberries, like this.
6Bake for 25 minutes. It should be golden brown and bubbling, like this.
7Serve warm with Greek yoghurt or vanilla Wheyhey ice cream as more of a pudding. Alternatively allow to cool, slice & eat as an on the go breakfast or snack.
